Garlicky Broth with Kale
and Sweet Potatoes


Both sweet potatoes and green kale contain potent antioxidants that boost your immunity. The amount of garlic seems like a lot, but it mellows with cooking. The soup freezes well.

2 1/2 teaspoon extra-virgin olive oil
1 large onion, chopped
3 1/2 teaspoon dried Italian herb seasoning
6 cups vegetable broth
2 15-ounce cans cannellini beans, drained & rinsed
1 pound sweet potatoes, scrubbed & diced
4 ounces Kale, tough stems removed, leaves chopped
12medium garlic cloves, minced salt & ground black pepper
1. Heat oil in soup pot over medium heat. Add onion and Italian herb seasoning; saute until onion soft and golden,
2. Stir in broth, beans, sweet potatoes, and kale; bring just to a boil. Reduce heat to low and simmer for 10 mins.
3. Add garlic to simmering soup base. Simmer until sweet potatoes and greens are tender, 15-20 mins. Season with salt and pepper to taste. Serve.

Homemade Chai Recipe

Bring two cups of filtered water to a boil, add 3 peppermint tea bags. Let simmer for 20 minutes.
To the peppermint tea,
Add 1 quart of soy or rice milk, 1 tsp. cardamom
1 tsp. ginger
1 tsp. ground cloves
1/2 tsp. of black peppercorn
Let this simmer for an additional 30 minutes.
Add honey or brown rice syrup to taste.

Curried Lemon-Garlic Broth
with Spinach & Cayenne


Lemon and honey have long been a popular remedy for soothing sore throats. The cayenne adds a fiery kick. Orzo is a small rice-shaped pasta.

6 cups vegetable broth
2 teaspoon curry powder
1/4 teaspoon cayenne
1/2 cup orzo
1/2 pound fresh spinach, tough stems removed, leaves chopped
2 tablespoons lemon juice
1 tablespoon honey
2 teaspoon extra-virgin olive oil
12 medium garlic cloves, minced
6 scallions, trimmed and minced
1. Bring vegetable broth, curry powder, and cayenne to a boil in soup pot. Add orzo and cook for 8 mins.
2. Stir spinach into simmering soup base and cook until just wilted, about 2 mins. Stir in lemon juice and honey.
3. Heat oil in medium saucepan over medium-low heat. Add garlic and scallions, saute for 30 seconds. Ladle soup into bowls and top with a portion of garlic-scallion mixture. Serve.
